Beware of the Potato Salad: Preventing Foodborne Illness in Summer
Warm weather means that bacteria in food can multiply faster and potentially pose a health threat, the U.S. Food and Drug Administration warns.
The FDA offers the following safety advice to help prevent foodborne illnesses during barbecue and picnic season:
Wash your hands well and often with soap and water for 20 seconds, especially after using the bathroom and before cooking or eating. If there are no water taps available, use a water jug, some soap and paper towels or moist disposable towelettes.Keep raw food separate from cooked food. Do not place cooked food on a plate that previously held raw meat, poultry, seafood or anything else and hasn't been cleaned in hot, soapy water.Marinate food in the refrigerator, not on the counter. Don't reuse marinade that contained raw meat.Cook food thoroughly in order to kill any harmful bacteria that may be present. Use a food thermometer to make sure food has reached the recommended minimum temperature, which is 160 degrees F for hamburger and 165 degrees F for chicken. If you use the microwave, stove or oven to partially cook food to reduce grilling time, do so immediately before you place the food on the barbeque.Try to refrigerate or freeze leftovers immediately. Never leave food out for more than an hour when the temperature is above 90 degrees F.Keep hot foods at or above 140 degrees F and keep cold foods at or below 40 degrees F.More information

The Academy of Nutrition and Dietetics suggests how kids can enjoy a healthy summer vacation:

CrossFit Long Beach Announces Their Summer Leaning Challenge Winners

201224 CrossFit Long Beach members adopted the Paleo Lifestyle with amazing results losing a combined total of 133 inches in 8 weeks.
Los Angeles-Long Beach, CA (1888PressRelease) June 19, 2012 - Dave Brooks and Emily Mumper, members of CrossFit Long Beach, were announced as the male and female winners of the CrossFit Long Beach Summer Leaning Challenge Saturday, June 16 during the school's annual leaning challenge finale banquet.
Brooks, the male winner of the challenge, lost a total of 11.25 inches while Cumper, the female winner topped everyone with 12 total inches lost. The group lost a combined total of over 133 inches in just eight weeks.
Brooks and Mumper topped 24 people who all adopted the Paleo Diet, eliminating grains, dairy, sugar and all processed food from their daily intake. Tari Okoya won second place with 10.75 inches lost while Lauren Crispin and Krista Dart tied at third place, both having lost 8.75 inches.
Brooks credits the guidance of his coaches at CrossFit Long Beach for his success. In addition to a streamlined physique, digestive problems that once plagued him have now been alleviated thanks to the adoption of the Paleo lifestyle. He says he has "tons of energy during the day" and sleep problems are now a thing of the past.
"I had a lot of apprehension in letting go of the past," Brooks said about changing his lifestyle. "But the process has been fun and exciting. The challenge opened up a whole new world to me."
CrossFit Long Beach, a school of elite fitness in Signal Hill, teaches their students that the path to health and wellness is through their stomachs. Adopting a diet that welcomes non-processed foods, zero grains, dairy and sugar is a lifestyle choice and not a temporary fix.
"For eight weeks, the leaning contestants took the first step to ultimate health and fitness," Gina Caywood, co-owner of CrossFit Long Beach, said. "They learned that exercising four to five days a week can get them in shape, but real results occur when they learn to eat the right foods."
The popularity of the contest presented a double-sided award for all contestants: the chance to get in the best shape of their life while pursuing a cash prize with the idea being that nothing can be lost from participating in the challenge except inches.
"Changing the way we eat is always a struggle," Chad Cross, head coach and co-owner of CrossFit Long Beach, said. "These members proved that with just a little persistence and dedication, a change can and will occur."

(3) graduating Cherokee High School Seniors, (3) Area School Coaches and (4) returning college students will fill Senior Staff positions at ProStrength & Speed for Summer 2012.
Knoxville, TN (1888PressRelease) May 23, 2012 - ProStength & Speed is a youth community health initiative offered by Rural Health Services Consortium, Inc. open to all students 4th - 12th grades. Dr. Calendine announced this week that ProStrength will have its youngest and most qualified senior staff in the program's history. ProStrength is staffed by young people of Hawkins County that have distinguished themselves as leaders within the program. Qualified Junior Staff members are promoted to Senior following High School Graduation. This summer graduating Seniors include Brittany Johnson, Justin House, and Christina Maddox. Following graduation this Saturday, these Seniors all have big college plans. Brittany is a (4) yr member of the varsity softball, basketball, and cross country team at CHS and plans to attend Walter State Community College. Christina has signed to play Basketball this fall for Walter State and Justin will be attending Emory & Henry College where he will be playing football.
Casey Ryans leads a group of Senior Staff members returning to ProStrength on College summer break. Casey put together a very successful prep basketball career at Cherokee High School and has completed her freshman year as a Morehead State University Lady Eagle. Cameron Duckworth returns after his freshman year at David Lipscomb University in Nashville as a Biology Major. Mark Collier has completed his second year of studies in Exercise Science at Walter State where he will earn his associate degree this summer. Gabe Brooks is completing studies at ETSU over the next year and applying for graduate school positions. Each of these young people have moved into leadership positions and are anxious to leave their mark on the program. Their background in various sports and disciplines of study continue to provide a well-rounded program for the youth of Hawkins County. Coach Casey Jones, Coach Matthew Davenport, and Coach Forrest Gladson will once again return to oversee the ProStrength Summer program, continuing their year-round dedication to our youth. Austin Albright and Chelsea Lane will work in advisory staff positions this summer as they complete their 2nd year of Medical School at ETSU and begin clinical rotations. Justin Morley has been a big part of getting this summer's program started and will be filling a fulltime position at Eastman in June.
The ProStrength Junior Staff program includes area High School students "in-training" for future Senior Staff positions. Returning Junior Staff members include Ali Thacker from Volunteer High School and Cherokee High School students Courtney Brooks, Kylie Russell, Ty Ryans, Tanner Trent, Cole Russell, Hunter Henegar, Peyton Brooks, and Tanner Blair. Dylan Lawson and Logan Lumpkins will be joining this summer's program as new Junior Staff members. Dylan helped Tanner Blair and Justin House run the after-school program this past year and Logan has distinguished himself as an outstanding participant within the program. Junior staff members complete didactic and practical training based on guidelines set by the National Strength and Conditioning Association and the American College of Sports Medicine. Shape Up, Safely, for Summer
Incorporating fitness into your life can boost your confidence and make you feel better inside and out, said the experts, from the University of Alabama at Birmingham.
"Start by throwing away all clothing catalogs with skinny models in skimpy bikinis on the front," Beth Kitchin, assistant professor of nutrition sciences, said in a university news release. "Then buy a bathing suit that flatters your shape. Going to extremes for weight loss leads to yo-yo dieting and makes you feel bad about yourself."
"The goal is to be a healthy size for you, so focus your attitude and energy on becoming the best version of yourself and enjoy the journey to health," added Lauren Whitt, wellness coordinator at the university.
The UAB experts said it's important to shape up for summer safely, and offered the following tips on how to reach your weight-loss goals:
Be realistic. Consult your doctor about how much weight you need to lose to be healthy, and then set up a timeline to meet that goal. You can safely lose up to 2 pounds per week, they said. Don't overdo it. Make just one lifestyle change each day, such as cutting out a soda or eating breakfast. "Taking small steps toward your goal will make it more attainable," Whitt said. "An early-morning meal with protein should keep you satisfied until lunchtime and help you resist high-fat, sugary mid-morning snacks." Move more. It's important to increase your activity level, the experts noted. Start slow and be consistent. List exercise as an event on your work calendar so you have a reminder. Personalize your workout. Although most people should aim for at least 150 minutes of moderate exercise or 75 minutes of vigorous exercise each week, the workout you choose should suit your personality, the experts advised. "If you are a social person, try going to a group class like Zumba or step aerobics," Whitt said. "Conversely, if you are more into a solo workout, go with walking, running or even swimming. If you burn at least 250 calories through exercise and cut out at least 250 calories from food -- one 20-ounce bottle of soda -- you easily can lose at least 1 pound a week." Don't skip meals. A better way to reduce calories is to keep a record of your food intake for a few days. "You'll find out where extra calories are coming from," Kitchin said. Make wise food choices. Half of your meals should be fruits and vegetables, a quarter should be grains and the last quarter should be lean proteins such as poultry and fish. It's also important to choose low-fat and high-fiber recipes; limit your portions; skip sugary drinks; and opt for foods that are baked, braised, broiled, grilled, poached, roasted or steamed over those that are fried, buttered, creamed or breaded.The experts said women should have no more than one alcoholic drink and men should have no more than two drinks per day.
"Alcohol tends to increase your appetite and provides calories without nutrients," Whitt said. "If you skip it altogether, you can reach your goals more easily."
An occasional treat doesn't mean you can't meet your weight-loss goals, the experts added. Getting in shape does not require perfection; just get back on track the next morning.

Summer Skin Care Advice
When summer season arrives, there’s nowhere to be but outside. Of course you are entitled to enjoy the warm sunshine, but remember to be smart about it.
As you’ve probably been told many times before, UV radiation from the sun has harmful effects, and that you have to take good care of your skin. Here’s some for you to follow in order to keep your skin looking and feeling healthy.
Remember to apply sunscreen before heading outdoors. In fact, don’t just apply sunscreen during the summer-try to get into this habit all throughout the year. No matter how overcast the sky may be, UV rays can still penetrate there way into the skin. After applying sunscreen on your face and body during the morning, regularly re-apply some every two to three hours. Try to use a sunscreen that has a sun protection factor of at least 15.
One important piece of is to moisturize.
Your skin tends to get very dry throughout the summer season, and it needs as much moisture as it can get. Some sunscreens not only protect your skin from UV rays, but also moisturize it at the same time.
When you end up sunbathing the whole day, you’re bound to get sunburn. Another piece of is to treat your skin with products that contain large amounts of Aloe Vera. Aloe Vera soothes dryness, burns, and discomfort.
Follow these three pieces of advice this summer and you can be confident that your skin is taken good care of.
